Simple Raw Sausage Recipe (for 5 kg of meat)
Required Ingredients:
• Meat: 5 kg (e.g., a mix of pork and beef)
• Cold water: approximately 300 ml
• Salt: 80–90 g (to taste)
• Herb and Spice Blend for Raw Sausage: 1 package (30 g)
• Natural casings (hog casings, sheep casings, or collagen casings)
Preparation:
• Prepare the meat: Cut the meat into pieces and grind it to the desired coarseness for the sausage (e.g., pork coarsely, beef finely).
• Mix and season: Mix all the ground meats together, add salt, the Herb and Spice Blend, and cold water. Knead the meat thoroughly (about 10 minutes) until the mixture is uniform and sticky.
• Fill the casings: Using a sausage stuffer, fill the casings with the meat mixture, avoiding air pockets. Tie the sausages to the required length.
• Serving: The raw sausage can be grilled, fried, or baked in the oven immediately after preparation!
